Pumpkin Spice Margarita
1 ½ ounces gold tequila
2 ounces half and half
½ ounce simple syrup
½ ounce Pumpkin Spice Syrup (see below for recipe)
½ teaspoon vanilla extract
¼ teaspoon pumpkin spice blend (use store bought or your favorite recipe!)
Cinnamon & Sugar (for rimming)
For Pumpkin Spice Syrup:
This recipe makes two cups, which is more than enough for several cocktails–but the syrup alone makes great gifts for the pumpkin spice fanatics in your life! Bottle it up and give it out, or keep it for yourself. It’ll hold for at least 3 months in your refrigerator.
1 ½ cups water
¾ cup brown sugar
1 cup sugar
2 teaspoons ground cinnamon
½ teaspoon ground ginger
1/2 teaspoon ground cloves
½ teaspoon ground nutmeg
¼ cup canned pumpkin puree
1 ½ tablespoons vanilla extract
In a medium saucepan, combine water and both white and brown sugars. Simmer on medium-low heat until the sugar dissolves.
Reduce heat to low, and whisk in cinnamon, ginger, cloves, nutmeg, and pumpkin puree. Simmer for 8 minutes, stirring occasionally. Be careful to not allow the mixture to boil, otherwise you’ll end up with candy, not syrup!
Remove from heat, and while mixture is still hot, strain through a mesh strainer lined with cheese cloth.
Allow the syrup to cool to room-temperature, and stir in the vanilla extract. Store in a mason jar or any other airtight container.
And now for the cocktail:
Blend four parts sugar to one part cinnamon and spread evenly in a shallow dish. Rim a martini glass with this blend and set aside.
Combine all other ingredients in a martini shaker, with ice, and shake to chill. Strain into rimmed glass, and serve!
