Chocolate Chip Bread Pudding Bars
Recipe: Chocolate Chip Bread Pudding Bars
- 6 cups dry bread cubes (any bread works, try it with leftover muffins, even!)
- 1¼ cups semisweet chocolate chips
- 4 eggs
- 3 cups milk
- 1 cup sugar
- 1 tablespoon vanilla
Preheat oven to 350 degrees. Spread bread cubes in a greased 13x9x2-inch baking dish. Evenly sprinkle chocolate chips over bread cubes and set aside.
In a large mixing bowl, whisk together eggs, milk, sugar, and vanilla. Evenly pour mixture over the top of bread and chocolate in pan. Gently press down on the bread cubes with a spatula, making sure the bread cubes absorb the egg mixture, but the chocolate pieces are still covered.
Bake, uncovered, for 30-40 minutes or until a knife inserted near the center comes out clean. If the top starts to over-brown, cover loosely with foil until custard is set. Allow to cool for at least 30 minutes. Using a sharp knife, slice into bars, between two and three inches in width.
